Spring Shallots are freshly harvested shallots with their bright green tops still attached. The subtly purple, pink, and white bulbs differ from dried Shallots in that they are missing their papery skin. The flavor is also milder, sweeter, and more juicy than cured Shallots. The green tops are edible and similar to Scallions in flavor and application.
