A delicious green, used for sautéing and cooking, common in Jamaica and other parts of the Caribbean. The flavor is somewhat similar to spinach, but the leaves are hardier. This red version bleeds a beautiful red color when cooked. Whereas most greens prefer cooler weather, callaloo thrives in the heat of the summer.
