Japanese Eggplants are long, slender, and straight or slightly curved with dark purple skin. The inner flesh is nearly seedless. When cooked, it tastes mild and sweet with a tender, meaty texture. Unlike other eggplants, the Japanese Eggplant’s skin will retain its color after cooking.
